Easy Birria De Res
Everybody talks about Birria, it’s all the rave when it comes to tacos but no one talks about how easy it is to make!
Ingredients:
Chuck Roast
1/3 Cup Apple Cider Vinegar
1 lime juiced
3-4 Chipotle Chiles
4 Garlic Cloves
2 Tsp Oregano
4 Tsp Cumin
2 Tsp Salt
1/2 Tsp Cloves
1 Onion
1 Can El Pato Tomato Sauce
3/4 Cup Chicken Broth
4 Bay Leaves
Instructions:
Sear Meat: Salt & pepper your chuck roast. In a hot cast iron skillet with oil, sear chuck roast on all sides.
Combine Ingredients & spin: Add all ingredients (except Bay leaves & chicken broth) to blender & blend til smooth. Add chicken broth to desired consistency. I like it in a wet sauce, the meat will add it’s own oils to it as well.
In the Pot: Add the chuck roast to a crock pot or a large pot. Cover meat with sauce then add bay leaves.
Low & Slow: Cover and cook on low for 4-6 hours (or until meat is tender and pulls apart easily).
Use It Well: Separate the meat from the sauce and use it how you wish! Use tortillas and melty cheese for tacos on a skillet, add to ramen, whatever you do use that beautiful sauce and enjoy!
Caveat* This is slightly spicy, my kids liked it in small doses. For a less spicy version, trade pato for tomato sauce.
