The Best Vegan Cinnamon Rolls
I know you’ve had that giant one at the food court or the ones you pull out of a tube scared when you pop it. Let me show you the best cinnamon rolls and how EASY they are! Did I mention they’re dairy-free?
Ingredients:
Dough
5 1/2 cups flour
2 cups milk (we do homemade coco-almond)
2 teaspoons dry yeast (1 packet)
1 cup raw cane sugar
1 teaspoon salt
1/2 cup vegan butter
Coconut oil for frying (Vegetable oil if no coconut)
Filling
3/4 Cup Vegan Butter
3/4 Cup Brown Sugar
2 TBSP Ground Cinnamon
Icing
1 Cup Powdered Sugar
2 TBSP Milk
1/2 TSP Vanilla Extract
Instructions:
Wet Ingredients: In stand mixer bowl add 2 cups of warm milk - then whisk together melted butter, sugar, and yeast until incorporated and let rest for 10 min.
Add Dry Ingredients & spin: Add flour & salt then turn the mixer on for 8 minutes. Let it spin until the dough is soft & smooth.
Add to Cornmeal: Gradually add flour, whisking to remove lumps (add sprinkles of water to keep moist if needed) Continue mixing until a soft dough forms.
Rest the Dough: Cover it with a damp kitchen towel. Let it rise for 1-1.5 hours. It should double in suze.
Flatten the Dough: Sprinkle a clean surface with flour (so the dough doesn’t stick) drop the dough on top. Cover your roller with excess flour then roll over the dough until you have a lovely rectangle. Do your best to make the sides straight so you don’t have awkward looking small rolls.
Spread the Love: Spread softened vegan butter over the rectangle. Sprinkle brown sugar and cinnamon on every inch of it. Don’t be shy.
Slice & Roll it Up: Take a pizza cutter and slice even strips ( about 3 inches apart) all the way across. Start on the end closest to you and roll each slice into nice toit rolls & place in a buttered/oiled baking dish. Make sure they’re hugging & preheat the oven to 350 degrees.
Bake & Prep Frosting: Bake your rolls 25-30 min (or until beautifully golden brown). While they’re baking, in a medium bowl combine your powdered sugar, milk, and vanilla extract for your icing. (If you want it a little thicker, add a TBSP of vegan cream cheese)
Pull, Frost, Enjoy: Once golden brown pull and let cool almost completely before adding your frosting (unless you want it super melty then do your thing). Frost and enjoy, try not to eat them all the same day.
