How Bout Dem Vegan Biscuits?
Who doesn’t like biscuits? My daughter is allergic to eggs, dairy, peanuts, sesame . . . the list goes on. I had to make sure she can have all the best and today, we're diving into the world of plant-based goodness with a recipe that will make your taste buds dance – Vegan Biscuits! Whether you're a committed vegan or just looking to incorporate more plant-based options into your family's meals, these biscuits are a hit for breakfast, brunch, or any time you're craving a warm, flaky treat. Let's get into the kitchen and whip up a batch of this joy.
Ingredients:
2 cups bread flour (preferably unbleached & organic)
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup vegan butter (cold and cubed, it MUST be cold)
3/4 cup unsweetened almond milk (or your preferred plant-based milk)
1 tablespoon honey
1 tablespoon apple cider vinegar or lemon
Instructions:
Preheat and Prep:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Activate the Almond Milk:
In a small bowl, mix the almond milk and apple cider vinegar(or lemon). Let it sit for a few minutes until it curdles slightly, creating a vegan buttermilk substitute.
Combine Dry Ingredients:
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
Cut in the Vegan Butter:
Add the cold, cubed vegan butter to the dry ingredients. Use a pastry cutter, fork, or your fingers (more fun) to cut the butter into the flour until the mixture resembles coarse crumbs.
Create the Dough:
Make a well in the center of the mixture and pour in the almond milk and vinegar mixture. Gently stir until just combined. Be careful not to over mix – a slightly shaggy dough is what we're aiming for.
Roll and Cut:
Turn the dough onto a floured surface and gently knead it a couple of times. Roll it out to about 1-inch thickness. Use a round biscuit cutter (or mason jar lid dipped in flour) to cut out biscuits and place them on the prepared baking sheet.
Bake to Perfection:
Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown on top.
Serve Warm:
Once they're out of the oven, let the biscuits cool for a few minutes before serving. They're best enjoyed warm with your favorite vegan butter, jam, or a drizzle of maple syrup. Or you can make them nice and savory with some gravy on top.
