The Best Roasted Tomato Soup

Ingredients
Tomato Soup
6-8 Roma tomatoes
1 Red Bell Pepper
1 Yellow onion
1 Garlic Head
Handful of Fresh Basil
2 Tablespoons of Favorite Butter (Vegan or Kerrygold)
1 Tablespoon Brown Sugar
2 Teaspoon Sea Salt
1 Teaspoon Black Pepper
1 Teaspoon Garlic Powder
1 Teaspoon Onion Powder
1/4 Teaspoon Paprika
1/4 Teaspoon Cayenne Pepper
1/2 Can of Coconut Cream
1 Can Tomato Paste
2 cups Organic Chicken Stock (Or Bone Broth)
Instructions:
Preheat and Prep:
Preheat your oven to 450°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
Roast the Veggies:
Chop tomatoes, bell peppers, and onions, and place on the baking sheet then hit with some spray oil. Cut the top off of the garlic head cover with some olive oil & salt then wrap with foil and place on baking sheet. Roast for 25 minutes or until blackened in spots. Pull when ready.
Into the Pot:
Heat a large pot to medium then drop in your favorite butter. Once melted, add tomato paste, and stir until softened. Roughly chop basil then add to the mixture and stir until incorporated.
Add roasted vegetables & garlic to the pot then add chicken stock, brown sugar, salt, pepper, garlic & onion powder, paprika, and cayenne. Turn heat to medium-low and stir
Blend it up:
Using an immersion blender, chop up everything until it gets to your desired texture. (I like mine a lil thicc) and serve hot!
Grilled Cheese:
Prep the Sammy:
Heat the skillet to medium, take your bread (I’d suggest sourdough) and spread softened butter (You can make roasted garlic butter to step up the savory flavor, that recipe can be found on another post) over an ENTIRE slice. I mean from crust to crust, let there be butter on every centimeter. Set aside. On the other slice add your cheese (I do 2 slices cheddar, 1 mozzarella in the middle). Place the buttered slice on top and flip into the skillet, butter down.
In the Skillet:
Spread butter across the entire top quickly then continuously slide the sandwich around. This movement will insure there is consistent browning across the bread.
Once browned to your liking, flip and repeat. KEEP IT MOVING!
Chop & Dip:
Cut the sandwich in 2-4 pieces and enjoy dipping into the beautifully savory-sweet mixture of that tomato soup
